  • 3 cup strawberries

  • 1 cup butter (room temperature)

  • 1 cup sugar

  • 1 egg

  • 2 tsp. vanilla extract

  • 2 cup flour

  • 1 tsp. baking soda

  • 1/2 tsp. kosher salt

  • 1/3 cup strawberry jam

  • 2 oz. cream cheese

  • 2 cup powdered sugar

  • 1/4 cup milk

  • 1 tsp. vanilla extract

Directions

  1. 1

Using a blender, pulverize freeze-dried strawberries into a fine powder.

  2. 2

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

  3. 3

Cream butter, sugar, and vanilla extract together until light and fluffy. Beat in the egg, then gradually incorporate flour, baking soda, a part of the strawberry powder, and salt. Lastly, mix in the strawberry jam.

  4. 4

Roll the dough into balls and place them on the prepared baking sheet.

  5. 5

Bake for 8 minutes. Lightly tap the baking sheet to flatten the cookies, then bake for an additional 2-3 minutes.

  6. 6

Combine cream cheese, powdered sugar, hot milk, vanilla extract, and the remaining strawberry powder. Adjust consistency with additional milk if needed.

  7. 7

Dip cooled cookies into prepared icing or drizzle icing over the tops.
